At Endymion Coffee Roasters, we value the simple but often overlooked idea that specialty coffee should be viewed as a celebration of the farm where it was grown and the processing methods used.

The higher quality of speciality coffees, which makes them both a delight to roast and drink, deserve higher prices, which in turn allow growers and cooperatives to support their families and reinvest in even more advanced agricultural techniques.

Of course, not all coffee meets the demanding definition of Specialty. However, there are many coffees that may not meet this benchmark, and they still taste very good. These lots often make their way into blends, where they can be enjoyed at a very reasonable price for both the grower and the coffee lover.
